
Who doesn’t love bhujia sev. Being indian I am sure our palate is made to suit spicy and chatpata taste. One such crazy snack which I personally like is Haldiram’s Aloo bhujia sev. The tangy, spicy and crunch make me hog it through almost every evening.
Through my childhood days my parents used to give us sev or mixture as snacks during evening for us to munch on. It was available through out the week or even months sometimes. Being reminded by good old days I thought of making some easy sev/bhujia for snacks and with this stored for some days I can give it as snacks occasionally to my daughter as well.
So let’s start making simple and easy aloo bhujia today š I will take you through step by step in making this simple snack.
Ingredients
1. For making bhujia
- Potatoes(medium size) : 02
- Besan/ chickpea : 01 cup
- Rice flour : 2 teaspoons
- Salt : to taste
- Kala namak/ black salt : 1/4 teaspoon
- Red chilli powder : 1/2 spoon(adjust as required)
- Turmeric : 1/4 teaspoon
- Pepper powder : 1/4 teaspoon
- Jeera powder : 1/4 teaspoon
- Oil : for deep frying(+ 1small spoon for dough)
2. For seasoning
- Salt : 1/4 teaspoon (adjust as needed)
- Chat masala : 1/4 teaspoon
- Red chilli powder : 1/4 teaspoon
- Pepper powder : 1/4 teaspoon
Preparation
a) Bhujia sev preparation method
- Add boiled and mashed potatoes in a bowl
- Add besan and rice flour to it(rice flour makes sev super crispy).
- Now season the bhujia dough by adding salt, pepper powder, jeera powder, kaala namak, red chilli powder and turmeric.
- Also add a small spoon of oil.
- Grease inner sides of chakri maker(I am using traditional chakri maker)
- Use thin holed plate for making sev.
- Roll the prepared dough into cylindrical shape.
- Insert in chakri maker and press through holed plates into hot oil.
- Let it cook on one side for 30seconds and then flip on other side to cook for 20seconds.
- Take out the crispy bhujia sev and make similar batches as much as needed.
b) Seasoning masala mix
- In a small cup add salt, pepper powder, red chilli powder and chat masala. (Can also add mint powder/garlic powder)
- Mix all well and seasoning masala mix will be ready.
- Sprinkle the mix on top of prepared bhujia and lightly crumble.
- The sev breaks to tiny, smaller portions.
Spicy, crunchy and chatpata ALOO BHUJIA is ready which can be savoured any time of the day. It is easy to make and can be prepared in just few minutes. This easy snack can be stored for upto 2months.
